Veal liver, peas & cashews in curry
 
- Soak cashews in water for 2 to 3 hours. Drain.
- Wash liver and remove membrane. Cut into small pieces and mix with coriander powder, cumin powder, cayenne powder, black pepper, and 1/2 teaspoon apple cider vinegar. Allow to marinate for at least 30 minutes.
- Heat oil in pan. Sautéé onions, garlic, cardamom pods, cinnamon stick, and curry leaves until onions are translucent.
- Add marinated liver and stir-fry for 5 minutes. Remove liver.
- Add cashews, peas, coconut milk, add salt and simmer for 15 minutes. Add liver and cook an additional 5 minutes.
