Mushroom bhaji
- Wipe the mushrooms with damp kitchen paper and thickly slice.
- Heat the oil in a medium saucepan over a medium heat. Add the onion
and cook, stirring frequently, for 5-6 minutes, until the onion is soft but not
brown. Add the garlic purée and cook, stirring, for 2 minutes.
- Add the cumin, coriander
and chili powder and cook, stirring for 1 minute. Add the mushrooms, salt and
tomato purée and stir until all the ingredients are thoroughly blended.
- Sprinkle the water evenly
over the mushrooms and reduce the heat to low. Cover and cook for 5 minutes,
stir, then cook for another 5 minutes. The sauce should have thickened, but if
appears runny, cook, uncovered, for 3-4 minutes, or until you achieve the
desired consistency.
- Transfer to a serving
dish, sprinkle the chives on top and serve immediately.
